An option when purchasing a Gulfstream aircraft that has the three-zone cabin layout is where you want your galley located (example aircraft: G4, G550, G650). Your options are the forward cabin right at the entrance or in the aft cabin right before the lavatory.

Anecdotally, buyers prefer the forward cabin. The forward cabin option means the flight attendant is not walking through the cabin every time they need to get something for a passenger. That may not seem like a big thing, but when passengers are sleeping or in a meeting at the conference table, having the attendant walking through the cabin may not be desirable.
On the flip side, the aft galley sells almost as well as the forward galley (see below graph for pre-owned sales chart). One benefit of the aft galley is that it does provide a buffer of privacy for the aft lavatory, separating it a bit from the main cabin.
Gulfstream V Forward Galley
Either location you choose is personal and something to consider. A way to guide you in your choosing is to charter an aircraft with the galley in each location to decide if there is one you prefer. However, it may be best to hold loosely to your preference as the pre-owned market may not have the availability of exactly what you desire.
